Fresh Basil Pesto

INGREDIENTS
- 2 Cups Fresh Basil Leaves
- 1/3 Cup Pine Nuts (or Cashew Nuts)
- 1/3 Cup freshly grated parmesan cheese
- 3 Cloves of garlic (roasted or fresh)
- 1/3 Cup Olive Oil
- 1 teaspoon fresh lemon juice
- ½ Teaspoon Salt
- Freshly ground black pepper, to taste

METHOD
- Pulse together Basil, nuts, cheese, garlic and olive oil until smooth
- Lemon juice and salt and pulse again
- Add cracked black pepper to taste.
- Place in a Tupperware or glass jar in the fridge and keep up to 7 days in the fridge.
