Fresh Basil Pesto

INGREDIENTS

  • 2 Cups Fresh Basil Leaves
  • 1/3 Cup Pine Nuts (or Cashew Nuts)
  • 1/3 Cup freshly grated parmesan cheese
  • 3 Cloves of garlic (roasted or fresh)
  • 1/3 Cup Olive Oil
  • 1 teaspoon fresh lemon juice
  • ½ Teaspoon Salt
  • Freshly ground black pepper, to taste

METHOD

  • Pulse together  Basil, nuts, cheese, garlic and olive oil until smooth
  • Lemon juice and salt and pulse again
  • Add cracked black pepper to taste.
  • Place in a Tupperware or glass jar in the fridge and keep up to 7 days in the fridge.
